Prepare the vegetables by finely chopping the onion, garlic, and red chili pepper (remove the seeds for less heat).
- 2
In a large pan, heat the olive oil over medium heat. Sauté the chopped onion until translucent (3-4 minutes).
- 3
Add the chopped garlic and chili and cook for 1 minute, stirring to release the aromas.
- 4
Pour in the peeled tomatoes, crush them with a wooden spoon. Add salt, red wine (if using), and a pinch of sugar.
- 5
Reduce the heat and let simmer covered for about 15 minutes, stirring regularly.
- 6
Just before serving, add the shredded fresh basil and stir gently.
- 7
Serve the sauce hot with your pasta, grilled vegetables, or meat, accompanied by grated parmesan if desired.

- For a more flavorful sauce, extend the simmering to 30-40 minutes over very low heat.
- Less spicy version: replace the chili with black pepper or sweet paprika.
- Vegetarian variation: add zucchini, mushrooms, or bell peppers.
- If the sauce is too acidic, add a pinch of sugar or honey.
- Taste and adjust seasoning (salt, pepper, sugar) during cooking.
