Preheat the oven to 180°C. Separate the egg whites from the yolks. Beat the egg whites until stiff peaks form. In another bowl, beat the yolks with the sugar until the mixture whitens. Gently incorporate the beaten egg whites, then the sifted flour.

Spread the batter on a baking sheet lined with parchment paper. Bake for 8 to 10 minutes. When out of the oven, turn the biscuit onto a clean towel sprinkled with icing sugar. Roll it immediately with the towel and let it cool.

Scrape the seeds from the vanilla pod. Whip the very cold cream into chantilly with the icing sugar and vanilla until you get a firm texture.

Carefully unroll the cooled biscuit. Spread the vanilla chantilly in an even layer, then distribute the red fruits. Roll the biscuit again firmly without squeezing too much.

Wrap the yule log in plastic wrap and refrigerate for at least 3 hours. When serving, decorate with the remaining chantilly and fresh red fruits.

- Use very cold cream and a chilled bowl for firm chantilly
